Was a vegetable potato bake...
Step 1:
Partially boil some potatoes (I used about 7 for this dish) then cut them and scatter them into the bottom of an oven-safe casserole dish...

Step 2:
In a saucepan, melt a dollop or two of butter, then add two diced onions, 2 cans of tin tomatoes. Cook for about 5 minutes.
Then add in 2 cans of red kidney beans and some peas (i used frozen ones that I'd already cooked up).
Cook that up for about another 5 minutes stirring regularly.
Spoon out the mixture on top of the potatoes into the dish.

Add a layer of cheese (i just cut mine off the block in a kind of mish-mashed fashion!) and bake at about 160 degrees celcius in a fan forced oven (or not) for about 15-20 minutes think it was.
And voila...a yummy dinner for all the fam.
Throw together a little garden salad to go with it (i was too tired to and everyone was hungry so we didn't) if you get a chance.

Sounds yum - just have to omit the onions which I can't eat.
Our menu tonight was very simple as I don't get home from work until almost 6.30 - I bought a bbq chicken, baked some veges, made broc and cauli with white sauce and some gravy and dinner was ready. Pity the cleaning up team seem to have disappeared.......
A chook and vegies is always a winner around here too Karen!

What an interesting combo of ingrediants. I never would have thought to put that together, but I think I'll try it! :-)
